Recipes for Summer Sustenance: Minty Melon Masterpiece
This minty melon salad is a simple dish that is great for any summer event. Ingredients are minimal, but add a hint of color to any plate! While light in calories, melons are richer in nutrients than you may think. Honeydew, cantaloupe, and watermelon are all great sources of vitamin C, and honeydew and cantaloupe are high in vitamin A and potassium, which helps lower blood pressure.
Note: I prefer mine with watermelon and honeydew only, but you can customize per your preference!
Prep time: 20 minutes
- watermelon, balled
- honeydew, balled
- cantaloupe, balled
- fresh mint, chopped
- Use melon baller to scoop out your favorite melons.
- In bowl, mix fresh mint with melon.
- Set in fridge for several hours before serving.
Tip: Make sure your melons are ripe and juicy, and that you allow your salad to stand for several hours, covered, in the fridge. This allowas all the flavors to mix thoroughly, which is what makes this such a cooling and spectacular treat!
